Amy's Famous Napkin Chicken
On my last night in AZ , the lovely and multi-talented AmyH deigned to share the secret of her world-famous napkin chicken with me.
Step one: take a large cloth napkin and lay it flat, like so:
Step two: roll it from both ends toward the middle:
Step three: pick it up and fold it in the middle:
Steps four and five: grasp firmly in left hand at the fold. With right hand, tease out the inner rolls at each of the four corners:
Step six: unfold carefully...
And... voilà!

Sounds like you had a great time - wish I could have been there!
The surrounding tables wanted to know what the fun was all about so I did it again for the crowd. Good times!
And now I'm all disappointed b/c Amy didn't make a napkin chicken for me. Maybe we had paper napkins? I don't know, all I remember is the Guinness and the champagne cocktails. (And the lavender creme brulee.)
